I like Jersey Mike's.
Jimmy John's is okay, but their bread is a little unusual-tasting. Plus they only do cold subs.
Subway? Absolute slop. The restaurant smell has never been adequately explained, the operations are uneven, and the ingredients are horrible, I would know, I worked there. Had to throw out a bunch of stuff when it came in, but my IQ is well above the average Subway worker.
I remember I loved Potbelly in college, but that was like ten years ago, and while there's still a store in town, there's no free parking in the area.
I sometimes make my own sandwiches but there's always caveats: a toaster oven is no replacement for the "quick ovens" Subway had. When I worked at Subway I would prepare my own sandwiches including toasting the spinach and onion. Unfortunately, no one at Subway has ever prepared my sandwich close to correct.
The biggest challenge when making a sandwich at home is two-fold: availability of bread (you have to really prepare that stuff ahead of time, like getting a frozen loaf and reheating it in the oven) and getting that stuff toasted.
