Ghost in the shell is god damn overrated.
The first Ghost in the Shell movie was like "Akira," fantastically animated, unabashedly adult, in a then popular genre (cyberpunk.) It was a perfect gateway anime for nerds because it had tits, superheroic exploits and philosophical navelgazing. It was also released at a time when anime itself was just starting to go mainstream, but was still unknown enough to give those who watched it the sense that they were in some kind of cool kids club, which is why people have such a nostalgiaboner for it today. Even now, watching it, I recognize its importance as an anime milestone, and love its art and music, but I don't regard it as perfect, and actually find it kind of dull in spots.
As for Cowboy Bebop, I can't imagine Current Year being able to produce anything remotely on par with the original. I don't mind the race-swapping that much (although if Ein isn't a Corgi, I'm going to riot.) But I will be annoyed if the plot is nothing but gay shipping and SJW preachifying. The original Cowboy Bebop was an ensemble cast sit-com/action show that built in homages to all kinds of pop culture genres and figures. The new series is probably going to have Jet (whose last name will be retconned to "Johnson" or something like that because "Black" is too racist,) lecturing the rest of the cast on how much Black Lives Matter. And if it has anything to do with pop culture at all, it will probably be to point out how problematic anything made before 2016 was.
