American Diner Breakfast Appreciation Thread - Accept no substitutes
Pancakes/french toast/waffles, eggs the way you like them, sausage, bacon, hash browns, fruit, hot coffee, and a tall glass of orange juice. That's the American way.
Why do they always use dehydrated potatoes tho? Was the price to ship fresh potatoes, and the labor to shred them not economical in these trying times? Bleaugh!

The process is more than that. You have to peel them, shred, wash, dry, wash again, dry again, then cook. Dehydrated is faster as the starch is already out and you can just re-hydrate to a good consistency.
I maintain that the fried rehydrated potatoes I've been eating for 20+ year has been only out of pure hunger.
Nothing about them is appetizing or of good consistency. The edges have overfried bits, while most of the mass is a slightly-warmed and oil-soaked blob, turned once at most.

I’m a bit lot of a germaphobe and have massively high standards for kitchen cleanliness, but if I’m not having to go spend a half-hour in the bathroom as soon as I get home, then it was a bad diner breakfast.

For me? It's the "All-Star Special" with bacon, grits, eggs scrambled.
Some diners do not do pancakes well enough to my liking. Either too starchy or too thick. That said, a common breakfast dish I love from a diner is hash browns, sunny side up eggs with cheese, side of toast and French Toast.
I'd give my let nut to have a 10 dollar waffle house option in my neighorhood. Our local diner runs eggs and toast at 22.99. Yes I live in a stupid neighorhood filled with rich assholes.
Anyways, best diner breakfast option imo is a scramble. anything with "hearty" or "lumberjack" before scramble does the trick.
Back when I used to work nights, I'd stop by the local diner every Sunday morning after work. The place opened up in the 50s, and they make the best god damned breakfast I've ever had. Every now and then I'll have to cover an overnight shift when someone calls out, and I'll stop by. The waitress greets me by name and still has my order memorized even though I haven't been a regular for like three years now.

I don't know, I've kind of soured on all the lowest tier places. Cracker Barrel and Waffle House have really fallen off since fauxvid, while their prices have skyrocketed. I'd rather just pay a couple bucks more and get something really good at a slightly more upscale place like Flapjack's, First Watch or a non-chain local place. The biscuits and gravy are always a ton better (First Watch has some kind of mushroom sausage gravy that is waaaay better than it deserves to be), and the eggs are better as well. Couple bucks more (like literally $2), but well worth it.
And the coffee is usually better as well. Although that doesn't stop me from guzzling a gallon of it no matter where I'm at.
I don’t have any pictures of what I have eaten for breakfast at my 2 local breakfast places but both have been very delicious. The first one I went to is open all day from about 9-8 and the first time I went there I had a stack of pancakes along with some hash browns and a biscuit I ordered extra. Shit was delicious beyond compare. I also get their patty melt regularly when I go for dinner. The other one only stays open until about 2 I believe but has pancakes the size of your head I’m not even joking. I can barely see the person sitting across from me as I eat they’re so large lmao. Point is both places are incredible and I hope they stay in business for as long as I’m around
