As people mentioned Black Lagoon, but I'm also gonna toss in Hellsing Ultimate, Jourmoungand (from the same dude who did Black Lagoon I believe), Bongou Stray Dogs, Durarara!! (if you want a weird mix of slice of life/action/supernatural), Goblin Slayer, Gangsta, 91 Days (which is like a very serious mobster series about revenge), Read or Die (but I recommend the OVA more), Saga of Tanya the Evil, Drifters and finally Dogs - Stray Dogs Howling in the Dark.
 
Made in Abyss, Baccano!, Death Parade, anything by Shinichirō Watanabe has a great OST and all of them are pretty solid.

Shigurui: Death Frenzy has a great cliffhanger because the anime never finished so you have to read the manga to know what happens.
 
Fate/Zero. Others would recommend Fate/stay Night or Unlimited Blade Works first in order to appreciate the twist that happens in "stay/Night" but I think the series suffers from Darth Vader syndrome.

For something adult, Paranoia Agent is pretty good. I also enjoyed Monster, though that's a bit longer at 74 episodes. If you want something more adolescent (since you're looking at One Piece), .hack//Sign. There's other .hack sequels and it's a prequel to an entire game series, but you don't need to get into any of them to enjoy Sign. There's also Trigun, which is very short because the manga was only just really getting started, but it gives a pretty good taste for the series.
 
Darker than Black is a pretty decent series that nobody seems to talk about nowadays, and I think even its controversial second season, though flawed, is still enjoyable as long as you watch the interquel OVA's beforehand. The first season also works perfectly fine as a standalone watch. (S1 26 eps, OVA 4eps, S2 12 eps)

Madoka Magica is another one of those shows that everyone says to watch that I haven't seen anyone mention here yet, so I'll give it the obligatory push. (13 eps + movie)

Mob Psycho 100 is well worth a watch. I think it's TECHNICALLY not fully adapted, but IIRC it's pretty much just the epilogue that's yet to be animated and I don't remember the anime ending feeling incomplete. (25 eps)

Ouran Host Club is actually really funny, with way deeper character development than I was expecting. It's also one of those series where the deviations from the source material are actually an improvement. (26 eps)

Deadman Wonderland
Just read the manga. The anime is incomplete and never will be, but the source material is one of the few shonen* stories I actually enjoyed, and has the very important property of not dragging on forever and actually having a decent ending.
*while the gratuitous amounts of violence, gore and edginess means it's likely technically classified as a seinen, the teenage protag and the lack of overt sexual themes definitely makes it feel more like just a bloodier, edgier shonen.

Level E, made by the same guy who did Yuyu Hakusho and Hunter x Hunter. It's about an alien who trolls and pisses people off.
