I am a simple man, and I would be content to live on nothing butter beans and cornbread if I ever became a dirt poor turd farmer up in the hills. However, I am picky about my cornbread. I don't like the soft baked kind- it basically just tastes like bland cake to me.
I like hot water cornbread. Basically, make a dough with cornmeal, scalding hot water, butter, and salt. Roll it out thin and shallow fry it in either oil, or preferably bacon grease until the outside is golden and crispy.
Pair it with butter beans, collards, and/or pork of your choice. You can also use the cornbread to sop up the pot likker from your greens.
