I have had several types of salmon and they all have a very metallic taste, maybe it's a modern thing and you are from the 1800s but it tastes like shit.

If you ever get a chance, kokanee (landlocked sockeye salmon) are exceptional. Apparently there are some in Russia and Japanese lakes, in addition to the PNW / West Canada range of them! Wow.

Well, not everybody's taste is the same. Reading between the deviously subtle description, salmon tastes intensely metallic to you. But to me raw, it tastes milky, piquant and ever so slightly savoury, and yes a slight hint of iron (as most fish have). Cooked, it's creamy and the light, slightly metallic savouriness comes out as it flakes.

Either you have a severe intolerance of something within salmon (histamines from age or metallic content) or you're buying cheap bullshit that shouldn't be eaten. That or...you just don't taste it the same way.

Salmon for most of history was a poor people food. Ubiquitous, easy to catch.
Nowadays besides canned salmon, it's branded as a middle/high income food (farmed/wild caught).

The real issue is that even most restaurants fuck up salmon and overcook it.
Well seasoned and prepared salmon has a natural buttery and umami flavor.

I never order it in restaurants because I can't afford high end, and every middle or low end just overcooks it, making it chalky, crumbly and flat. I presume high end restaurants are better, but I don't know.

Don't buy salmon in a supermarket. If you get good ingredients and get a decent recipe and follow the recipe close enough, salmon is really really good.
