That part is a popular opinion, and more or less correct. I make exceptions for tartare and black-and-blue (charring the outside while leaving the inside nearly raw), but only occasionally. Really, though, in general, there's a reason we cook meat and it's to make it easier to absorb the nutrients in it. If you eat it raw you're really not going to metabolize it efficiently.
