Unpopular opinions about food

In fairness there is a zest to mayo grilled cheese even in thinner layers. It also burns more easily than butter. It works, but I see it as an improv method that you use if you don't have butter or bacon fat. Bacon grease from cooked breakfast is the best for a grilled cheese IMO.
Schmaltz from roasted chicken is also fucking amazing in this role.

My favorite is jalapeno pimento cheese that I add a little bit of stilton to. A little funk and a tiny bit of acid and heat from the pickled peppers that basically melts into a cheese sauce. Shit's next level.
Your ideas intrigue me and I wish to subscribe to your cheeseletter.

Fresh, dehydrated and already minced in a jar garlics all have their uses.
Making bacon at home sucks, same as deep frying, even if the end result is tasty.
Brussel sprouts are the best veggies, especially after blanching and airfrying them.
My favorite pizza toppings are pineapple chunks and broccoli florets

You're just not from a deep frying cvlture. You gotta put the deepfryer under the carport or in a shack and never change the oil, the oil gives it character. If you got a good deep fryer it's gonna be pretty darn good. I've seen some people deepfy in just a normal ass pot on the stove and it's just like bruh your house is gonna smell like a mcdonalds for weeks.

Use your oven. Line a half-sheet pan with aluminum foil (this is mostly to make cleanup not a complete pain in the ass) and place slices of thick-cut bacon on it. Place the pan in the oven and set it to 400F/205C. Yes, you're not preheating because having the bacon heat up slowly will render out more fat. Bake for 20-22 minutes (ovens do vary a bit, but that's what works for me and how I like my bacon - adjust accordingly if you like yours more or less crispy).

No muss, no fuss, plus you get perfectly flat strips of bacony goodness.
