Why, Kris is written as either a boy or a tomboy, you're supposed to just self-insert as them. Toby only uses they/them pronouns to get troonpoints because he knows his fanbase wants that.
Frisk/Chara was written purely as a player self-insert so it makes sense there too(with Chara being revealed as a girl when you do the Hitler route, kinda like Samus in OG Metroid)
Also they/them can mean a group, as in the group of the little yellownigger you play as, and you - the soul.

There's a game called Fuga : Melodies of Steel that has very undertale-ish character designs and does exactly that. It's pretty shit beyond the humor inherent in the concept of a bunch of kids commandeering a giant murder tank in a world war where they can commit suicide by using themselves as tank ammo (this is played completely straight ingame and does not land that way) and a nazi dog child soldier who bomb-vest suicides you if you don't recruit him hard enough. It's exactly as disappointing as you'd expect.
Details? Fuga belongs to a very Japanese, very niche franchise with animal people, mostly doges and cats, with no hybrids and very few humans, set in a bizarro 20th century IIRC. Tail Concerto is the earliest game of the series, for the PSX.

Didn't know we have an undertale thread. I don't know if this has been speculated on before but a friend and I have discussed theories. My personal pet theory is that since pretty much every character from the Dark World is an item in the physical world, I'm putting a massive stake on Ralsei being the fake horns that Kris would wear to feel more in line with his family when he was younger.
My only evidence is that Ralsei is very obviously reflective of Asriel, so the horns would be an imitation of him. Desire to be a goat creature to fit in with his family creating a goat creature that's helpful and sweet.
Maybe Kris wants to be friendly and kind, even though he's been noted as being a creepy little weirdo even before the heart showed up. After all, people can want to or intend to be something while in reality being nowhere near that. Path to hell is paved in good intentions and all.
