The Dude already mentioned The Ramones, but they've got so many great covers. Besides what he mentioned check out stuff like Do You Wanna Dance?, California Sun, Take it As it Comes, and Joey Ramone's cover of The Stooges' 1969.
The Misfits doing Blue Christmas. This is a bootleg but hearing Glenn Danzig do Elvis is always a treat. The segway into We Are 138 makes it even better.
Years later Danzig would do a proper studio cover of an Elvis song. It's great.
The Descendents do a great cover of The Beach Boys' Wendy.
Since I mentioned the Descendents, their sister band ALL plays a cool version of Hot Rod Lincoln.
And then Lagwagon does a good punk version of Bad Moon Rising.
I don't really care for U2, but this cover by Ignite made me like at least one of their songs. It's really good.
Black Flag did a lot of versions of Louie Louie over the years, but this one is my favorite. Henry improvs more on this than on any other version of it, and it's great.
Finally, (almost) anything by Me First and the Gimme Gimmes. The Gimmes are a punk rock supergroup and professional cover band. They cover all sorts of songs in punk form, often mashing up other parts of old punk songs in with the old classic song they're doing. This cover of My Heart Will Go On is different in style and closer to celtic punk, but this version of Karma Chameleon is more like their usual work:

This is a Korean version of the song "It's Raining Men." I'll be honest and say that I never listened to the original a lot, but this is amazing. I love everything about this cover from the arrangement to the vocals. Every time I listen to this I feel like all Hell is about to break loose, and I love it.

So, I like jazz music. Some of the music I have left over from my time in middle/high school jazz band included some bossa novas, and as you can guess, one of the bossas I had was "The Girl from Ipanema". It's probably my absolute favourite bossa.
Now I absolutely hate Amy Winehouse. Drunk British woman with a beehive hairdo does not a very good singer make. I found out she did a cover of "The Girl from Ipanema" quite some time ago, obviously before her death.
Now I would like to address the main reason I hate this cover. It's not her horrible slurring of the lyrics. It's not the fact that I can practically smell the alcohol on her breath while she's doing that guttural neanderthal mating call she thinks is "singing". Rather, it's the fact that everyone knows that when the girl from Ipanema passes, each one she passes goes "Ah", not "Aboo-weedy-jão".
Would recommend the Frank Sinatra version for a better cover.
As for a reasonably good cover, Trent Reznor did a pretty decent cover of Led Zeppelin's "Immigrant Song" for the The Girl with the Dragon Tattoo.

Those kind of remind me of Colin Meloy's covers of Morrissey. Like this.
And I love this cover of Ziggy Stardust even though other than a bit of distortion, it's nearly note for note identical to the original.
Also, re the Joni Mitchell track, is it really a cover if you record a song you wrote just because someone else recorded it first? Anyway it's a good track.

The best: Type O Negative's cover of "Summer Breeze" by Seals and Crofts. Pete Steele's voice is an aphrodisiac.
The worst: Five Finger Death Punch's cover of "House of the Rising Sun" by The Animals. This is the word 'edgelord' in song form.
