I am probably bad at the game and coping but sometimes I feel like dodges and parries don't register and it's infuriating. Either that or the window is just so small and off beat from where I think it is I miss it 50% of the time.

Couple things to keep in mind, you don't have press and release the button to get perfect parries, you just need to be holding block right before the attack lands to get it. Other thing is, there are items you can equip to increase the window where you can land a perfect parry or dodge.
