Fair enough. Also good call on advising to add provolone for the cheese. Unless you get a really good mozzarella, I feel like it's pretty one note for flavor.
I've noticed that a lot of the good cheese has at least some blend. The only real good mozzarella I've seen are ones that restaurants order from wholesale stores.
 
Don pepino sauce in a can is pretty good if you want store bought.
If any of you have a wood pellet grill and haven't tried pizza on it yet I would highly recommend it. Max it out and it adds just enough of a smoke flavor that you won't go back to a regular oven.
Back in the day pizzeria Uno's used to have a seafood pizza called the sea delicio and i have been trying for years to recreate it but still can't get it right.

Fontina is also an interesting one to add a little to the mix if you have it.
 
Sauce? i make my Pizza dough with greek yogurt and use crushed fresh tomato instead of sauce.
the best cheese on it is swiss cheese. raclette cheese makes every pizza better.
for toppings, i like german and french "Salami" on them, Italians never understood how to make good sausage.

I dont get why people are so into italian food, its not very good. Okay i get it, its part of the globohomo brown people fetish.
 
I do not think a pizza dough needs any oil or sugar. You can make a great dough with just flour, water, salt and yeast.

Using a large amount of yeast will get you a risen dough faster, but it'll be more flavorful if you use a small amount and let it rise a long time. Like instead of 2 teaspoons for 4 cups of flour, I might use 0.25 and let it rise for several days in the fridge.
