Hate Maruchan ramen - anything better? - Come discuss whatever is better than Maruchan ramen

am curious though, has anyone else tried Ichiran instant noodles?

For those who don't know: ichiran is a ramen chain in Japan but I believe they have a few overseas locations. The concept is basically interacting with others as little as possible, and they specialize in tonkatsu ramen. It was so popular that they began selling their own instant noodles that imitate the quality of the ramen served in the restaurant.
I went to one of their shops as a tourist thing in Japan. There was a long line stretching up the staircase and out the door, but the wait wasn't too bad actually. They have these funny little booths which are very cramped by American standards and these slips of paper you fill out. Then they serve it to you through a little window. Cramped but also kinda cozy in a way. Perfect for not socializing with society.

That store was also selling their own brand instant ramen and sauces at a gift shop but like you said it was really expensive and we decided to pass. The ramen in the restaurant was very good though. Plus it was quite cheap, and the yen keeps weakening against the dollar so some stuff is actually cheaper than it is in the US.
 
Shin Black ramen is actually pretty tolerable and good for me, but the Buldak spicy ones are too much

Ramen in a cup is invariably way shittier than the kind in a packet btw. The noodles are always mushy and sad because they're made to rehydrate more easily by just pouring hot water over them or putting them in the microwave, whereas the packet kind is usually thicker with better texture because you have to boil them on the stove as you would with non-instant noodles.

Shin is pretty mild imo , not a fan of buldak cos of the weird chemical taste .
I literally add an extra spoonful of gochujang when I make Shin lol. Also buldak is really gross I agree. It's memed almost as hard as Laoganma (as someone who loves chili oil to the point of making it at home, it has a weird metallic flavor. I feel like all the people who won't stfu about it have only ever had laoganma and not homemade or from a good authentic chinese restaurant)

We have ichiran here (nyc) but somehow I've still never been despite having randomly thought about going for like years lmao. Tonkotsu ramen tastes good but I usually can't stomach more than a few bites and I have no idea why. Maybe my kike genetics just get mad when I try eating something porky
 
Try the Tapatio ramen bowls. I remember the birria flavor being pretty good and not giving me indigestion afterwards. Also Indiomie mi goreng noodles from Indonesia, I think somebody mentioned those already and I absolutely second that - the three flavors I've tried were all among my favorites for stovetop ramen. On the other end of the spectrum, I wanted to like Buldak but every single time I've eaten any of the spicy flavors it gave me horrible acid, and some of the less spicy flavors just tasted revolting (the chili lime one was particularly bad). Buldak is a one-trick pony and if you're not out to impress anybody with your tolerance for obnoxious heat, you've got a lot of better options out there.

Yeah I feel like shin needs more spice sometimes lol . You should try the shin toomba, it's like the buldak carbonara without that buldak stank. LaoGanMa is alright, but I also prefer to make my own chili oil. Cheaper and tastes better. I loooove adding fried shallots and garlic to my chili oil and I usually use peanut oil or tallow !!!

I actually might try this next time I have a chance. I love birria and tapatio so I can't see how this wouldn't be delicious

Also Indiomie mi goreng noodles from Indonesia, I think somebody mentioned those already and I absolutely second that
Indomie is so good ! Especially with crispy shallots omg
 
Buldak has great noodles, awful flavor. I just make my own flavor up if I happen to have any around.
I love the texture of the noodles , especially how bouncy and chewy they are . Usually noodles with potato or tapioca starch have that texture so look out for those . What flavors do you make for your buldak?

Invest in a noodle press or extruder and make your own ramen. The difference is night and day.
There are purists out there who believe you can only make ramen at home by hand rolling them but that's 80 year old Japanese woman shit.

Usually just put gochujang or sriracha on the noodles after draining the water. If I'm feeling fancy, I'll make a curry flavor with curry powder.
 
I have a box of Nissan ramen and I really hate their weird spongy noddles. I'll take maruchan any day.. I have tried the fancier brands and just can't get into them.
Cook noodles. Drain 90% of water, add pack, enjoy

I'm not sure why you're bothered by me telling people to invest in something better so that they can eat a better version of the thing they like to eat.
The subtitle of the thread is literally "Come discuss whatever is better than Maruchan ramen" and I recommended making your own which really doesn't take that much effort at all, the machine does most of the work.
Nobody has to take my advice, I gave it and I moved on. I only came back to this thread because you're quoting me and I get those notifications.
So use your noodle, pun intended. If you want me to go away I need to stop getting the notifications, which means...
 
There's a middle ground between "make your own noodles from scratch" and the fried ones in instant ramen and that's dried noodles, which are at most grocers and definitely at Asian markets and have better texture than fried noodles when cooked up

Combine that with varying degrees of making a broth (I've found that instant miso soup packets are great as a starter for miso ramen if you're in a hurry, but you can easily make and freeze large quantities of dashi and use it and miso paste as needed for a base too) and with that and a bit of judicious meal prepping (especially with an instant pot or other pressure cooker) you can have something that still cooks up reasonably fast on an as-needed basis but is a bit more authentic than packaged instant ramen.

Best ramen I've had was my wife's when she homemakes the noodles with cake flour, but that's a rare treat.

If I have to go with instant stuff, my go to is Bul Dak spicy octopus after doing the noodles in, as someone else noted, miso soup mix.
