A ramen shop closed down about a decade ago and a disgruntled ex employee leaked their recipes on Reddit. They’re pretty solid, just need to divide the measurements as they’re listed to make in bulk

This is the faggiest sentence I've read all day.
I really wish nongshim would make a shin udon option, i love to use the shin seasoning packets to make soup while swapping the noodles for udon. Frozen udon is way better than the shelf stable vacuum packs though
 
Shin is pretty mild imo , not a fan of buldak cos of the weird chemical taste .
I am curious though, has anyone else tried Ichiran instant noodles?

I've had the Ichiran ramen you make at home. Probably doesn't serve much purpose for this thread because spending like $30 on a pack of ramen kind of defeats the point, but I would definitely recommend trying it once if anyone is interested. Easily the best instant ramen I've had, it's a unique experience. (they don't use powder packs, it's a pouch of concentrated broth, certainly tastes like real pork fat is in there).
They sell the straight noodles like in pic above, they also have the familiar brick/pillow pack ones but I think they're harder to find. Also fyi if you visit Korea they have the pic above packs there too at the fancy department store groceries. I haven't had the restaurant version so I can't compare.

Also, I'll plug a small youtube channel that I enjoy. Just a chill dad trying instant noodles, he's at like 200+ so far. No BS, gimmicks, jokes, no face mugging the camera. Honestly kind of feels like a peaceful ramen version of Atomic Shrimp haha. He seems to highly regard Marutai brand.

Only by a couple of minutes. All that should cost less than $10 for 6-7 servings(plus toppings) so it's in line with the instant packets while being overall better. I despise the texture of crappy instant noodles.

Some instant noodle brands sell a version of instant noodles with air dried noodles, like shin light for example. You might like that more than the traditional instant noodles as I believe they tend to fry the noodles in the manufacturing process.

Feels like its the Pizza Thread vs Frozen Pizza at this point - you pass instant at the point of getting things outside of the noodle package, wash/cutting those extras, then broth you'd boil in a pot vs just kettle for plain water or straight up microwave.

I disagree. A frozen pizza is a complete package.

That's a much different method than even making your own pizza from prepackaged components. However 'instant' ramen still requires "traditional" preparation.

It's not asking for other instant noodles suggestions. It's asking for "whatever is better than Maruchan". So non-instant noodles would apply. But I'll conced that even getting three separate ingredients may annoy people who prefer to just get a 12 pack of whatever instant noodles and get out of the store.
 
Stop buying shitty insta noodles, even the most expensive shit is for the weebs and tourists.
Invest in a noodle press or extruder and make your own ramen. The difference is night and day.
There are purists out there who believe you can only make ramen at home by hand rolling them but that's 80 year old Japanese woman shit.
That's utter lunacy! Also sometimes you just want a nice, hearty meal of a buldak black. Trust me, when you get that itch. Nothing will satisfy you.

Tbf, I'm a huge autist for chunky noodles so that explains why i love it so much. Especially with some lemon juice.

As for broth,shin ramyun is fantastic,though i like enjoying it plain because I'm square and boring.

Mixed everything provided in <2 min water boils via kettle, add hot water and let it idle for 4-10 min after without any attention. Microwaving whatever the package says, but again, zero attention required.

I wholeheartedly agree with you otherwise, but instant/quick/minimal effort part is sadly often quite key for some people and I this thread seems like the right one to suggest my above mentioned prep, with the best packet available for sale, and I'll argue its the Chinese one I mentioned a few pages earlier.

just a heads up... this is 1/5th of the amount of indomie flavors that exist now.
and that you can get ahold of.
The literal and only one problem I see there, is if I wanted just Mie without Indo.

I already sperged but try getting frozen udon from an Asian supermarket. A good instant broth is to mix lkk/knorr chicken powder, unflavored gelatin (bloom in water before adding) for body and mentsuyu. then add scallions, chili/sesame oil, white pepper, shichimi, miso, nori/wakame, greens, eggs, etc. depending on your taste
