Pitmaster X, a channel run by a guy who is an excellent cook:

Robin Seplut, a channel run by a guy who cares for feral cats:

Kirtter Klub, a channel about people who rescue animals:

Heads up, some of Kritter Klub's videos can be hard to watch.
 
My favourite is by far a streamer who's YouTube channel is 2ndjerma
He streams on twitch and his YouTube channel. Is utilized to post highlights from past streams. Absolutely love the guys personality and I find myself laughing at pretty much all of his content.
I find his videos are a great pick-me-up

 
If you like ASMR, Jojo's ASMR does some pretty memeworthy ASMR. He used to be a Leafy clone back in the day by the name of Sinn0h, but actually makes not half bad ASMR videos now.

 
Many of my favourites have already been mentioned, but here are a few more that haven't been AFAIK.

Adrian's Digital Basement
Retrocomputing guy whose strengths include board-level repairs and designing new expansions for old computers. Even if you don't sperg out on this stuff, his overall presentation and vibe makes him easy to watch.



bald and bankrupt
An English dude that spends a lot of his time travelling to the sketchiest places he can think of, and then does dumb shit when he gets there. Speaks fluent Russian. Favourite things include the Soviet Union and babushkas.



Daniel Ibbertson a.k.a. DJ Slope
Retrogamer from the UK. Best known for his Kickscammer videos. Works with Larry Bundy Jr from time to time, and has also collaborated with Stuart Ashen in the past.



Hand Tool Rescue
Repairs and restores antique tools and equipment. No spoken dialogue. Quite relaxing to watch.



Project Farm
This dude reminds me of a cross between AvE and Ned Flanders. Runs entertaining and informative tests on tools, workshop consumables etc.



Vinheteiro
A pianist and music teacher from Brazil with one of the most terrifying death stares I've ever seen.

The videos are pretty funny but it's the meta that takes it to the next level. In 2015 he did a video on crowdfunding, how it works and at the end he showed how to set up a kickstarter. His kickstarter was "Erik drinks wine and gets a haircut: the movie", the goal was to buy wine, get a haircut and film it. It got funded($4k) expected delivery date: January 2016 so two months later.

Then time went on and his hair grew longer and longer. A year passed and people started asking questions about when he would deliver on the kickstarter, he answered by saying that there was problems with the editing of the video - at the same time his hair was now long enough to touch his shoulders so he was obviously lying. But that is how kickstarter projects work. Then he got a haircut and it was a good one.
It was a joke that slowly percolated over almost two years and things like that is what makes him a fun personality on youtube.
