I thought that Speakers Network's explanation of the developmental history of FFXIV plus going forward at the time was pretty good and right in the wheelhouse of the sort of thing I like watching.

I think I'd also like some well-produced documentary-styled videos going over the extensive lore and world-building that's in the game, and in such a format where several topics are strung together to explain one overarching piece of in-universe history, because there are a lot of individual elements that factor together into a larger narrative.
EDIT: Also some storytime videos in the vein of, say, Madseason, where someone talks about the changes to XIV and the general atmosphere of the playerbase at each stage of the game's life cycle, for better or worse, in addition to reminiscing about their experiences. I think it's probably the fact that there's a whole lot of "for worse" on that matter is what holds anyone back from capitalizing on that undertaking, plus you have a very vocal portion of the game's fans who will try to shout you out of a room if you dare to say one negative thing about the game's players. Then there's also the fact that most people who've stuck with the game from the beginning almost always seem to have skeletons in their own closets that they don't want to get outed for by drawing any heat on themselves.
