Getting the ones from Shadowbringers and back should be pretty easy at this point, using undersizes. You should be able to undersize SOLO all of ARR's bosses and at least some of Heavensward's ones.
Mmmmmaybe Stormblood's earliest ones, as well. But you'll probably need to group up at that point.
You'll be amazed how much of those you can cheese at this point.
Some of the later shadowbringer's ones will still be hairy, but they'll only get easier.
Raids as a whole are tougher. I'd recommend getting a squad of 8 and doing that as a team, you'll be surprised how easy it is.
As for the Endwalker bosses, EX1 is "Follow the Tour Guide" and EX2 honestly isn't much more complicated - it's standard "effect combo" stuff for the most part.
The best thing I can recommend for you regarding the cool trials mounts is

As someone who has similar thoughts all the time, if you just dive in and try it you may end up doing better than you'd expect and having fun. If you keep an eye out on party finder you can probably find a fresh prog group and even if you don't end up clearing it in one session you'll get more experience and you can always try again with a different group.

Can you get raid mounts from the materiel containers?

Not from what I've seen. Mounts I know for a fact that are confirmed are the craftable chair mount and dodo mount.

I checked through a couple of databases for those, and according to them no you can't get the raid mounts through the GC containers. It appears to give mostly minions and a few crafted mounts like the flying chair.

Literally anytime you ever talk to someone about "The Griffin" in Stormblood, they basically say he was a fucking dick head that killed everyone under him and no one gives credit for anything, and in reality his fucking hissy hit didn't even do anything. Oh we broke through the wall that a 4 man party strike force infiltrated with ease, that summoning didn't do shit for that objective and everything afterwards his summoning only got in the way. Ilberd also basically hated everyone by the end of that plot point, he only did anything because he was pissed at the world and wanted to hurt people as bad as he had been hurt. He lost any semblance of being good by that point when he effectively said his people don't deserve to be free, just because they didn't have the same amount of patriotism, bravery, and will to throw themselves on a suicide mission as him.
Lyse deserves to be considered the liberator of Ala Mhigo more than Ilberd, fuck Ilberd.
Also people who look at "lawful" as just "following the law" are fucking dumb and need to actually read what that alignment means if they want to quote it.

And I'm really fucking sick of redditors calling Gaius or, I shit you not, nu-Gaius evil. Yes, he has political beliefs that you can call objectionable or on some fundamental level correct, but over-zealous... but that doesn't make him fucking evil. It just means you disagree with him and everything he does after he renounces his Garlean rank everything he does benefits not just himself, his adoptive daughter, or the empire, but the rest of Eorzea.

Gaius is awesome, fuck those people. Even back in ARR I liked him despite his meme tier script nowadays. One of the biggest downsides of Stormblood is we never really learned how Gaius ran Ala Mhigo during his time there, we just get one flashback and then the rest is Zenos just sitting around doing nothing.
FFXIV community: "Yotsuyu didn't do nuffin because muh abusive parents."
Meanwhile: "Fordola is a murderer and traitor! Why didn't we kill her wtf!?!??! She literally only has a bomb strapped to her neck and lives in a cell hated by almost everyone in her community, she isn't being punished enough for her actions!!! Her parents deserved to be killed, so her actions are not justified!"
Also meanwhile: "Ascians are really misunderstood, they just wanted to recreate the garden of eden that they lost by murdering millions of people."
Also meanwhile x2: "Lolorito should be dead, he screwed us over by...uh...keeping this entire scandal under wraps and the only reason it went to absolute shit is because of Raubahn's overreaching judgement. Why can't my WoL just murder literally everyone in Ul'dah?!?! It'll improve everything I swear!"
