FYI, I work for an auto manufacturer (please God, let them find this post and fire me) and we're implementing FOTA (flash over the air) to let us reprogram the actual control units via cell starting this year. Rip the fucking cell antennas out of your car because every update to any car in the last three years has made them worse.
I'm legit creeped out by how much we can get from individual cars and have pulled the antennas from mine, and it doesn't even have this capability... and I'm a guy that works on the development end.

That's not even getting into how easily they're hacked already without the ability to reprogram wirelessly.

I have so much anxiety about this its unreal. I would like to fully rebuild the ecu on my old shitbox some day, but besides that you just have to wonder... when will technology ACTUALLY GET BETTER. I'm so FUCKING tired of having to lurk on message boards to find anyone who cares about this stuff. The intelligence agencies are putting bugs in literally everything we own and they dont even hide it. Normalfagniggers are just watching sports and letting it happen, mocking you for caring at all. Is this really the only answer? To maintain an ancient car and avoid everything new? It's just a losing battle, I understand why a single person does it but I repeat, WHEN WILL WE MAKE THINGS THAT ARE GOOD AGAIN, WHEN WILL OUR SOCIETY BECOME AWAKE AGAIN

I ALWAYS bring this up to people, the fact their car has a big stupid iPad in the middle that distracts them and works like shit, and they look at me like I'm an insane person for even questioning it. When did everyone just accept that it is fine and normal to have a computer in the middle of your car? I despise touchscreens so having one in my car sounds like a nightmare. The fact they put them in luxury cars is just ridiculous too.

I have driven pre 2007 cars my entire life, and eventually I am going to have to upgrade to something post 2010s. I fucking hate the fact that newer cars scream at you for not having a seat-belt on (sorry I just want to drive 5mph to move my car down the street) and require you to use a touchpad radio and AC. Disgusting.

My advice to you is to just ball out in the mid 2000s market. A lot of weirdo yuppies collected mid 2000s Toyotas and Lexuses with barely any miles or wear. I have found a few 90s Toyotas with 1 previous owner for 4k. Just ball out, realize you are superior to all these iPad babies, and enjoy the peak of luxury sedans. You can also go for Hondas or Acuras. I had a bad experience with my Acura, but most are extremely reliable. The mid 2000 SUV's are some of the greatest cars ever made. (and no ipad) Most will run you less than 10k. Mine was 4k with 170,000 miles on it, and that model has seen over 500,000 in many instances.

These are god tier forevercars, watch everyone else's fischer price car fall apart every year while you still have the option to own something truly great. If your country bitches at you just think you are saving thousands a year by not making new car payments, so you can afford to put some aside for fees or inspections. Just don't submit to these new shitcars.

Like I said, the issue is that a car older than 20 years needs way more inspections and tests and it becomes a question of when it's just not worth it financially.
What specific inspections and tests are you referring to where this would be such a significant problem? Obviously with any used car you need to have it inspected, but the amount of money you save buying an older used car far outweighs the drawbacks of buying something new, especially given your specific criteria.

The only way to have a computer free car is to go carburetted.

Pretty much everything from the last 20 years has electronic throttle and computer assisted brakes.
Feedback carburetors have entered the chat.

What kind of communist Euro hellscape do you live in? Here you can put classic/antique plates on anything +25 yo and be exempt from any inspections/vehicle code.

OBC like ECU and other ancillary modules aren't all that bad. They make cars more reliable and easier to diagnose should something go wrong. What you want to avoid is a car with only direct injection and 4g modules for OTA updates. Also avoid anything Nissan/Renault.

Since you probably live in Europe, reminder that since 2018 all new vehicles sold in the EU have to have a geolocation tracker in them by law, the state know where all cars are at all time, and tampering with the system is illegal. Nothing can stop you from just putting aluminium around it to block the signal, but if you get in an accident you can get in trouble with your car insurance or the law.
