I like the America's Test Kitchen channel, Lan Lam's videos are good because she teaches techniques and science more than recipes which is helpful. Kind of like J Kenji Lopez-Alt, but not an annoying cunt.
Essen recipes is nice too. In fact I find I like almost all the silent foreign cooking shows, this one is just the most comfy.

I was going to mention him but didn't due to the disappearance. I probably watched like 10 of his videos and saw comments reacting to things he said and was like "What the fuck drugs are these people on, these videos are silent?" before i realized I needed to turn on captions.
Not cooking related but also in the "weird asian youtubers that up and disappeared" is Kiwami Japan. I miss watching him go through unnecessarily long processes to make knives out of stupid things.

The problem is theyre doing a pale imitation of Emeril, Alton, or Bordain. It's fine when that's your personality type, but a lot of them just act for show.

Do you mean @ShouldISeries on YouTube? I think he was the guy who created lolcowgo.net as well which made several lolcows' videos searchable (among which KingCobraJFS, whose food hacks he recreated at times). I think that site is sadly down now though.

Thanks for sharing this, I'm enjoying going through her back content. She seems to have reactivated two weeks ago but so far nothing cooking-related.
Most of my go-tos have already been mentioned (Lagerstrom, Helen Rennie), and this one won't be for everyone, but I've made several of Rainbow Plant Life's recipes and have been really happy with them. I'm not a vegan, but I enjoy dipping my toe into the cuisine sometimes. Rick Bayless is great for Mexican food; Jonathan Zargoza also does Mexican food and is generally more fun.
Lagerstrom seems to be on an extended hiatus. I think he took a break a year or so ago citing burout, so the fact that we're back there makes me worry that he might not come back. Hope he's ok.

I've been binging Vincenzo's stuff lately, i really like his react videos. Most reaction cooking channels are bland, but his have a lot of constructive criticism and it's great for those who enjoy italian cuisine

His cooking videos are great too for traditional dishes and shows you how to easily cook them at home.
It’s from his videos I learnt how to use a bain-marie for cacio e pepe and carbonara so I don’t split the sauce like a retard by accidentally making scrambled eggs.
