To throw my hat in the discussion. For me personally 2 things make it not my favorite to pick up and play very often. 1) I suck at parrying and unfortunately so are a lot of people on the more casual side. Bloodbourne is more for the hardcore From Software fans. 2) The fucking Lantern System in this game. BY far for me the worse "bonfire" system in the catalog. In other Souls like you could tell where your progress is from what bonfire you are at, but not BB. Since large swaths of areas wrap around and use the same lanterns. I am constantly running around checking old boss rooms to check and see if I have done that boss or not.

The only thing I liked about lanterns wasn't the lanterns themselves but the gravestones dividing the general regions, something that DS3 did better in a menu, albeit at the cost of a neat looking asset. You also ended up with the central yharnam stone having too many lanterns tied to it for quick access. The bigger issue with the lanterns is how shit the BB loading screens are, which were absolutely horrid at launch and didn't even include item splashes.

I don't know where you're getting that Gwyn number from. Everything I've seen lists getting the linking the fire ending at under 40%, regardless of platform. Using steam, let's list the completion stats for as many penultimate bosses as we can. DS1 has no equivalent, so let's use Seath, 4K, Nito, and BoC. DS2's cheevos are a mess and tell you nothing about penultimate bosses, but does give one for the single ending.
  • PTDE Seath: 24.2%
  • PTDE 4K: 23.9%
  • PTDE Nito: 23.8%
  • PTDE Bed of Chaos: 23.2%
  • Remaster Seath: 42.2%
  • Remaster 4K: 42.0%
  • Remaster Nito: 41.8%
  • Remaster Bed of Chaos: 41.4%
  • DS2 ending vanilla: 37.7%
  • SotFS ending: 34.0%
  • Twin Princes: 41.5%
  • Divine Dragon: 35.1%
  • Hoarah Loux: 39.5%
Those are all staggeringly similar and the trend did not start with BB. The only outliers are the now delisted PTDE with lord soul carriers sitting around 20%. The wet nurse fits in perfectly. I have no idea how you're supposed to glean "players are frustrated with contemporary From combat" from that.

I am doing it based on how many players defeated the 4 lords, which is 59%. You can also do the Fire ending + Dark ending percentage minus the 28% of people that were going for all achievements and you get around 60% of people that completed the game.

Bloodborne is even easier since you need to beat the Wet nurse to get to the ending choices as such we can know pretty easily that 42% of players got to the end of the game

The first are the numbers they collected using their data vs the official PSN numbers. I tend to rely on their numbers more because the PSN is generally unreliable. But even if you use the official numbers, 25% of Bloodborne players beat the Wet nurse vs 47%~ that beat Gwyn

The website numbers are based on the psn profiles that have been linked to their site which they take the trophy data from, which if you go to the main page says it is around 6 million. While the official numbers are from playstation players that won the trophy and have an online connection that allows their data to be added to the PSN database

Ok so it's an enthusiast website. That explains why the user figures are higher than the PSN reported ones. No idea if the PS numbers are bunk but they produce a result that's inline with the stats from steam, at least for any of the titles that aren't BB. BB is an outlier but that flies in the face of DS3, Sekiro, and ER, which should be reporting downward trends as well, per the premise of the argument, but are not by either metric that site uses.
So, did BB filter people in a way the other titles didn't?

The data irrefutable shows that more people finished DS1 remastered than Bloodborne, both on general PSN statics as well as of those who linked their accounts on the achievement website. DS1 was discounted for PS plus subscribers multiple times up to 75% discounts.
