Hormone levels in your body are always changing, since they have numerous roles and often act as a feedback loop or are part of a natural process in a different way.
It’s not like your body produces X mg of estrogen every day in the morning, which is how troons get their shots.

Children and adolescents don’t have fully developed brains. It’s why young offenders aren’t usually tried as adults or sentenced to death or life in prison.
Operating a vehicle also requires cognitive maturity. Children don’t have a fully-formed understanding of mortality, permanence, vulnerability etc. (it’s one reason why kids can be fearless, but as adults we look back at some of the outright dangerous things we did and wonder WTF we were thinking. Well… we weren’t thinking of all the potential consequences, because those were foreign concepts.)
Laws preventing children from working, and requiring them to be enrolled in education and provided with support exist to prevent the exploitation of children. Without them, you end up with kids working (and dying) in horrific work conditions. This happens in countries without labor laws and protections for children.
But here in developed nations, we have all these laws and protections for children based on the notion that they need to be protected from exploitation and not be treated as adults until their brains have reached a level of cognitive maturity as an adult.
Anyone arguing that a 12-year-old has the capacity to decide to undergo reproductive surgery, or that an 8-year-old understands the implications of taking puberty blockers may well as argue for the removal of all laws that exist to protect children from any and all consequences or exploitation.

You can still blame something on a defective product (whether it was defective or not) while acknowledging that you also fucked up.
