For real though, you'd have to brutally murder everyone in power in the CCP, at least the figureheads, then setup a puppet dictator or party to gradually turn it into a democracy. You could reveal things the CCP has done and tried to cover up to turn Chinese opinion against them, but that would be too slow as the Chinese are fiercely loyal and nationalist.

Cheapest/least risky route IMO would be a mix of embargos, trade fuckery, and straight up sabotage of its infrastructure and economy by whatever remote means can be used. If I were given the means and the mission I would spend several years heading task-force to develop a stuxnet on steroids which would be used to target and paralyze both civilian and military infrastructure.
