Men lusting after dainty, trimmed female hands, I can understand.

Women being into meaty, gnarly dude hands I cannot fathom

Not all dude hands are meaty and gnarly. I don't think it's a fetish in the same way men have a fetish for something like women's feet and more that strong hands/strong grip are a sign of masculinity, a symbol for protection and caring. Holding hands is romantic and intimate without being sexual. Women also pay attention to men's hands because you can learn a lot about the man like his personal hygiene habbits by his nails, if he works a physical job or not and ofc marriage status.
