It seems odd to me why we chose one dominant arm and one dominant leg for most activities.

And by the way, why not everyone ambidextrous? Make full use of the human body that way and help with balance and coordination

This is the actual answer. It's an evolutionary adaptation that exploits the unlikelihood of an opponent having encountered or prepared for it before, it depends on its own scarcity to be advantageous.
