Flat Earthers like to feel special for believing in something most other people don't believe in. It really almost has nothing to do with the subject matter. If you want to see the Earth from space for your self you can buy a ticket on a Russian rocket or if you want to see the poles for your self you can charter a copter out of McMurdo. Flat Eathers are not scientists and don't approach the topic with epistemic humility (they aren't honest about their pet hypothesis) and just produce a bunch of one sided rationalisations to support their case.

My favourite Flat Earth Theory is what they say about gravity. They think gravity should be at its highest at the south pole because that's where the ice wall is and lowest at the north pole because the Earth is gravitation-ally shaped like a dinner plate. But if this were the case GPS which relays on the difference in gravity from Geo-stationary orbit and on the Earth surface to do time-distance calculations to track objects accurately. If Flat Earth was true, then GPS would not work consistently on the earth as it dose because the time calculations would be different depending on when the object was geographically and not based on the object's relative gravity; the relative gravity changes time's rate which is needed for the calculations. You wouldn't be able to know where you were on the Earth because time would not be a function of distance and gravity and instead a function of position and time, which could couldn't solve for because you'd have to know here the GPS modem was initialized from to accurately calculate the position from partial information if flat earth was real, which is astoundingly isn't.

If you want a simple experiment you can do at home, go to a big filed like a American Football pitch and shoot a laser level to the ground across the filed so that the beam is parallel to the longest side of the field. Then every few feet measure the distance from the beam and the ground. The ground should progressively move away form the beam; the height of the beam from the ground will get lager the further away form the source of the laser. It ancient Greece the same experiment was preformed with mile-markers and at sunset over a field, but screw that and use a laser pointer today.

No idea, also given what little difference it would make in most people's lives (unless they're a pilot, astronaut, etc) - I'm not sure why they seem so hell-bent on arguing for it, or believe there would be any rationale for a "giant coverup".

Now if people are just using "flat earth arguments" to to debunk silly, illogical arguments such as "I can't see it with my own eyes, therefore I don't believe it" (e.x. which would mean that since the earth looks flat to the naked eye, you should believe that as well if you were logically consistent) - then that's a different thing entirely.
