It's different for everybody but a normal healthy person could go weeks without shitting before they die. At some point your shit will start compressing your internal organs and poison you from the inside but the exact time that happens depends entirely on your physical build.

@The Evil Midnight Bomber already got it exactly right. You can refuse to poop and eventually die, but it takes a good long while.

I haven't heard of anyone committing deliberate suicide by fecal retention, though. If you wanted to show off your iron will in the service of a greater cause, a hunger strike is going to play a lot better in the press than a poop strike. Hunger strikers look pale and thin and romantic, and if you hear on the news that they were force-fed by the guards, that's a whole lot more noble in the mind's eye than "the guards held him down and gave him an enema." Even if you were singing protest songs during the procedure.

If you're in the grip of the medical system and you cannot poop (and you're not at end-of-life), eventually someone will remove the feces for you. Does that count as shitting, if someone else does it?

Stool withholding is something that happens in children and developmentally-delayed (or very mentally-ill) adults. It usually starts with painful pooping, usually due to constipation, but it could be some other poop-related trauma or just fear of pooping in a new place, like school. That obviously sucks, so the person decides they will just elect not to poop and that will solve the problem forever.

There are a lot of kid-level books you can buy or download about the subject, to help convince someone that pooping is necessary and will be easier if you do it every day.

I normally go twice a day. But there were times in the army where shitting was more admin than it was worth so I just didn't shit. I think the longest was 2 weeks.

Usually I go once a day, sometimes more. One time though I basically had no urge to shit for like 4 days and was honestly afraid I was going to get sick and go to the hospital, eventually I dropped a big deuce with no pain or anything.

It's a crapshoot. Sometimes people lose their appetite and naturally stop eating at an earlier point as their stool backs up. Sometimes people grow surprising megacolons and essentially develop a big poop capacitor before it starts obviously affecting them. People with physical small bowel obstructions have a blockage much further up in their digestive tract; someone withholding stool due to mental issues is pinching it off very nearly at the end, so they're filling up from the toe of the sock. As it were.
