I used to think that the difference between them was that Internet famous was for e-celebs with a positive reputation on here and grift wars was for e-celebs with a negative reputation. But then maldavious figtree is in internet famous, as is Karl kasarda. Now I can understand Karl being there because he became a lolcow midway through his e-celebdom, but maldavious got a thread because of an event that was perceived very poorly and only led to more reputation damaging material to be found. So what gives?

"Internet Famous" is for lolcows who happen to also be content creators of some kind. They aren't necessarily political or grifters in nature, even if they do occasionally talk about politics - see Doobus Goobus, whose primary content is art and animation, even if most of it is political.

"Grift Wars" is primarily for lolcows who are primarily known for being political commentators and grifters, hence the name. Ethan Ralph, H3H3, Hasan Piker, etc., those guys just talk about politics.

I'd use the following heuristic: is the lolcow some political talking head who is always trying to get money out of you? Grift Wars. Is the lolcow a generally non-political streamer who only occasionally spergs about politics? Internet Famous.
