Mercury. Most elliptical orbit for a planet-sized object, plus it takes a shit ton of fuel to get there, and it actually has a genuine (albeit weak) dynamo-produced magnetic field. Core is fat as fuck and made of iron. I think it would be very cool to see the Sun from the surface at perihelion.
 
Pluto doesn't care what we think and I respect that about a heavenly body.

Ceres is up there? Let's take a look at Ceres...

Let's take a look at beleaguered Pluto:

POW! That's how you planet! Multiple tasteful colors, a slew of textures, and a common-sense location in our solar system.

Ceres could never.

ceres has cyro-volcano's and a sub surface ocean
Mars. Its moons are called Phobos and Deimos
it has the tallest mountain in the solar system* called olympus mons

(theres a mountain on vesta that might be taller but its disputed)
