Last night was baked chicken and mashed potatoes, the other night was baked spaghetti with cottage cheese and pepper jack cheese. Tonight, I'm sick so I boiled ramen noodles since i have no energy.

I made the most bomb-ass large burritos today. It wasn't as spicy as I thought it would be but it turned out damn good. I ran out of bacon though, gonna whip up another batch once I'm done with this one.

It was messy as hell and a lot of work but it was worth it. Miles ahead of anything I could get at any Mexican restaurant.

I made beef stock yesterday and made french onion soup with the stock today, with sourdough rolls. the best comfort food imo. sometimes i add pan fried chicken thighs to the french onion soup; it goes really well with the rich flavors and is just perfect but makes it into more of a casserole than a soup

I was feeling kinda sick yesterday so I made a very basic chicken noodle soup.

My most recent creation is a giant, 30-egg omelette with a mushroom and a whole onion cut into it, plus salt and a spice. It was kind of crude, as it was a 'will this work?' experiment, but edible and very tasty.

I got some of those long pumpkins from my grandma. Which is good by itself, sure, but also... I made some pumpkin pasta. Has fried bacon, spices, onion+garlic, some cayenne and mozzarella.
My dudes, it turned out great. The sweet pumpkin works so well with salty stuff and basil and cayenne and such. To me this is essential autumn/winter food stuff.

I fried eggs perfectly in olive oil this morning.

The eggs were awesomely crispy through and through but the yolk was runny still. It was prefect, seasoned with garlic pepper. Was actually stunning to taste and something I really am looking forward to again tomorrow

I made a traditional Javanese dish known as semur. It is essentially beef stew with potatoes, eggs, shallots, sweet soy sauce, nutmeg, cinnamon and cloves.

It was quite delicious, if I do say so myself.

Prawn and mushroom risotto.
I've never made risotto before, and I hate to admit I fell into the first time risotto issue of undercooking. The recipe I was roughly following said 20 minutes max for cooking, I was at 30 mins and felt bad for my hungry husband. It wasn't so bad, like maybe slightly el dente, I think it needed 5 more mins max. Thankfully, he said it was deliciously and way more cooked then his mom's risotto growing up. Next time I won't make it on a work night.

Also made coconut chai seed pudding, I'll top with pineapple for breakfast.
Added honey and tumeric.

Butternut Squash Curry Soup

1 butternut squash
1 cauliflower
1 large sweet onion

cut into chunks and roast until browned
4 cups chicken stock
curry powder, nutmeg and allspice to taste

Once the veggies are nice and soft, add them to the stock and simmer for 20 mins, then take everything and put it through a blender until smooth and uniform. Add salt and pepper to taste.

Frickin yummy, warming and has enough fibre that even Dear Feeder could take a dump without stressing.

Seriously...frickin amazing soup.

Currently boiling some hard boiled eggs to have for the week. I think if I make an egg salad sandwich I will try unflavored greek yogurt instead of mayo to make it a bit healthier and maybe a bit of curry powder.

Had to use parchment paper instead of foil for chicken yesterday, and it came out looking better and tasting better. So that was nice to know.

First time making a pizza from scratch. Got super into making the dough as thin as possible but it still fluffed up more than I wanted in the oven. Any tips on getting a reeeeeally thin one to stay thin and just bubble occasionally?
