I mean it's possible that Gaster does have more control over the narrative than is suggested. Given his distant and mildly curious attitude towards us it's possible he simply dropped us into the world just to see what we'd do, not because he's powerless and needs our help. It's an experiment to him.
No matter what path you choose Gaster never judges you, he seems to be far more interested in your experience than anything else. You can choose to skip the knight or keep slamming your dick in the car door until you manage to hurt it when narratively you're absolutely not supposed to, and either way Gaster is cool with it. He encourages you because you've demonstrated that it's the path you want to take.
The guy is already powerful enough to summon and resurrect eldritch time gods and forge human bodies for them to inhabit, I think he's more than capable of changing the lives of a few teenagers if he felt like it.

One of her blog pages is basically all about her managing to find a boundary break in Dragon Blazers when she was a kid that she was always able to get back to by getting herself lost in an inescapable maze that wasn't meant to have any sort of exit (looping screens), but she always came up against a door by finding what was at first a random sequence of inputs that she found she could replicate perfectly later on, but it was a door that she could never figure out how to get past all by herself
The key takeaway I got from this is that the average professional writer is a nigger who can't write, and if you don't keep them on a short leash they will ruin your entire project

The knight fight seems significant to me because it's the only time Gaster stops us in the middle of what we're doing to tell us that it's interesting. He even helps us by hastening our respawn.
