Press the cogwheel in the upper-right. Hard mode basically forces you to use any revealed letters in future guesses. I think it's helpful to sometimes ignore letters you already know about so you can test others, so I leave it off.

I totally have done that where I clearly guessed a word that wasn't going to be correct or was missing a letter I'd gotten right. It lets you cover five more potential letters, and in all honesty if you clear the field of wrong letters it makes it easier to piece the word together.
