I always liked symbols that draw on anatomical facets like eyes or hands, due to their universal nature, which leads to their presence in a lot of different cultures and time periods, but often maintaining similar themes, such as eyes being connected to knowledge, health, or connection to other planes. The All-Seeing Eye probably being the most well-known instance.
