I'd actually thank her for bringing it all up on the first date. Throw up that red flag early, girl!
And even if I 100% agreed with her viewpoints, I'd be super uncomfortable talking about that on the first date. First date questions should be things like "Do you have any siblings?" or "What are your hobbies?" The heavier stuff comes later, when you're more comfortable with each other.

Oh fuck me I thought STEM was safe.
It's the like the colors on a poisonous frog, it warns you that there will be trouble. Those fucking sunglasses alone are a bonerkiller
It is also a sign of her mental age. Those fucking sunglasses alone are a bonerkiller
You know what's funny about this? Some of these complaints were leveled at the original Death Wish back in the 70s. Like Vincent Canby called the original movie, "a despicable movie, one that raises complex questions in order to offer bigoted, frivolous, oversimplified answers." And here we are, 43 years later with a remake and the perpetually offended Twitter crowd launching the same complaints.
I'm appalled you even had to ask.Eeeh to be fair, Engineering is kind of the white bread of the STEM field. It's a lot more common to run into an engineer than a mathematician of some kind. Being that it isn't an icky job sphere that can pay well and to be honest has no political ramifications at all (like some bio sciences), I'm not surprised they're busting into STEM outside of poorly done "studies" to prove there is no actual biological sex (yes this is a real study). STEM has always had a broad political view, but it's always been pretty balanced. Hopefully they'll keep it that way, because in general real STEM field professionals don't have time for feelings. Even in my own field there are some pretty extreme liberals starting to pop up (much to the distress of traditional old guys), but its more in the sense of "we should have more options available to everyone at a better cost!" and the old guys not wanting to invest in new equipment, despite it being available (and also a lot of politicians having stock in this specific field not wanting to lose money). I don't think it'll change much. I mean, how much emotion can you put into making blueprints and mechanical design? There is literally nothing to be offended by.

Also, who the fuck would hold back his flatulence all day to save it up on the off chance he comes across a gassy lady to outfart?
Here I thought the reason a person wouldn't want to fart loud enough to wake the dead is because it would be embarrassing. Shoulda known it was because a loud fart draws hoards of rapists from their hiding places, like the world's most powerful aphrodisiac.
These legbeards look like they could use some free FGM themselves. Two bitches whose fathers and boyfriends didn't slap enough.

Corollary: There's a reason that people with blue, red, green, pink, or other unnaturally dyed hair is called "danger hair". It serves the same purpose as the orange coloration on a monarch butterfly (bleh). You didn't have to advertise it. I could tell just by looking at you.
I'd walk the safe distance away from that and call in the airstrike
