Frosted Sugar Cookies
2/3 cup butter or margarine
1 1/3 cup sugar
1 teaspoon vanilla flavoring
2 eggs
3 cups self-rising flour*
Cream together butter, sugar and vanilla, add eggs, mix well.
Stir in flour until well blended.
Chill dough if needed for shaping.
Roll dough into small balls, placing them on a cookie sheet about 2 inches apart, and press them down until they're about 1/3 inch thick.
Bake in a preheated 375 degree oven for 7-8 minutes. Try to not overbake them.
Let cookies cool, then top with frosting.
Need a frosting recipe? Too good to just use the premade stuff in a can? Here ya go-
Powdered Sugar Frosting
1 cup powdered sugar
1/4 teaspoon vanilla flavoring
about 1 tablespoon milk
Add vanilla to powdered sugar, slowly add milk until desired consistency is reached.
Use on whatever needs some frosting.
*if using all purpose flour instead of self rising, add 1 teaspoon baking powder (or 1/4 teaspoon baking soda) and 1/4 teaspoon salt for each cup of all purpose flour.
If using gluten free flour, be sure to check if it replaces all purpose or self rising and adjust the recipe accordingly.
