I was a big fan of the Space Quest series. They used text input for interaction, so not point and click, but SQ2 and SQ3 were my favourites. The point and click SQ4 and SQ5 SCI engine games were also good, but I could never get into SQ6. There was a real charm with the VGA SCI graphics, particularly the hand painted backgrounds, and the more cartoony SVGA graphics of SQ6 seemed like a massive downgrade:

There's a fan SQ2 remake that does a very job of emulating that VGA SCI style and feel. There's other similar VGA fan remakes of some of the other AGI Sierra adventure games, such as Kings Quest and Quest for Glory series.

I think Kings Quest 4 is the most fun game in Sierra's EGA style but it has some serious dumb shit like crossing pits with a 2x4 on a pitch black screen. Somebody did a remake of that one too but it's basically the same except now point and click instead of text.

Personally there's something off in a lot of fan "vga" remakes mostly the colors don't seem authentic, and the backgrounds are really amateurish compared to actual Sierra paintings. The one I'm looking forward to is Quest for Glory 5 (might be a couple years.) Most of those fan groups moved to original games, some better than others.

It is really cool seeing new EGA games though. I enjoyed Crimson Diamond a lot (it's on steam and gog) as well as Betrayed Alliance (free on itchio) which is actually made in the SCI engine so it will run on DOS or scummvm or anywhere. It has combat and a couple sequels that might be out now. It looks so much like Telwynium I thought maybe it got renamed.
