Lightly butter the exterior of the panini for extra crispiness. Mozzarella and any kind of ham or (especially maple) bacon sprinkled with an Italian herb blend is pretty good. If you like avocado you can toast panini halves and pop it on mashed and mixed with finely broken up feta cheese - don't add salt if you do so, the feta is enough. The avo mix goes well with a bit of thin sliced ham too.

I like how the George Foreman Grill is just a panini press at an angle.

On that note, make some bitchin' grilled cheese.
I actually know people who not only still have their George Foreman grill but actually USE IT on a consistent basis.

I had a GF grill for a while, but it broke, then I got a replacement one that didn't have detatchable plates to put in the dishwasher.
Fuck cleaning those by hand up its stupid ass forever.

Cuban sandwiches are good. I bet you could make those in it.
 
Telera rolls make really good bread for a panini. Good bread is probably the most important component imo.

My favorite panini is Thanksgiving leftovers: turkey, mashed potatoes, cranberry sauce, and sweet potatoes (with marshmellow). All smothered in gravy.
Super delicious.
