I'm going to blame this degradation in his behavior on people grooming him/influencing him to think this way. He's always had people in his life willing to enable him, so I'm sure he's just found someone or even a group of people that have been pushing him further and further down the slippery slope. He's been willing to accept that he's a pedophile for a while now; I don't think it would take too much convincing after that to be more and more accepting of other heinous shit. He still maintains that he's not going out of his way to find kids, but the fact that he seems to have concrete plans to fuck, kill, and eat an animal should be incredibly alarming.
