Orechiette , bacon and broccoli

Oriechiette ( https://en.wikipedia.org/wiki/Orecchiette ) , bacon n broccoli

Easy , fast and delicious.

What do you need:

1 big broccoli
1 small onion
2 cloves of garlic (or not if you're a fag)
300 gr bacon
150 gr of grana padano or parmiggiano reggiano cheese grated by yourself or your mother
Half a kilo orechiette pasta
salt
pepper
1 bottle of red wine


-Alright let's get a pan with water on the boil for the broccoli.Throw in a bit of salt.Cut up the broccoli in tiny trees (flowers?). Don't throw the stem away but peel it and cut it up it is the best part of th vegetable really.
Throw it in when it boils and cook it for 3 -4 mins max then immediately drain and cool under cold water to preserve the bite.

-dice the onion but just peel the garlic ,make some cuts in it,or crush it lightly
-put 5l water on boil on for your pasta with a good spoonful of salt
-when it boils throw in the orecchiette.stir
-take a pan , put in good splash of olive oil throw in the onions and garlic and let it fry till glazed then throw in the bacon cubes or strips. fire not too high as the pasta still needs to cook .
-take the garlic clove out after a few mins
- Open the bottle of red wine and pour yourself a glass.
-nice
-grate the cheese
-if the pasta's ready, drain it BUT keep a glass of the cooking water aside.
-throw the pasta back into the hot cooking pot, while still on low fire, and add the bacon and onion and broccoli, the glass of cooking water you saved and the cheese.
-stir
-add pepper

I do a meatless version of this whenever I can find Orechiette (oddly rare at my local stores). Basically the same recipe but I use asparagus instead of broccoli, solid dish.
