It's probably better to use a spatula as the fork could scratch up the pan.
Not if you hold it flat, prongs up at a 10 to 15 degree angle and hold it this way as you swirl it through the eggs so the curve of the fork sits in the pan. The idea is the egg passes through the prongs and aerated the mixture so the omelette stays light and fluffy.

That said, a whisk would work too.

You dont need to flip it. Just cook the eggs on a low heat and theyll cook all the way through. Make sure to tilt the pan so that the runny parts get contact with the pan.
The amount of eggs you use will depend on the size of your pan.

When i used to make omlettes id always fuck up the flipping and end up with scrambled eggs.

Found this useful graphic over a year ago and it worked perfect for me when I was learning. A couple of notes:

-The ingredient section should be 1 tbsp water OR milk (not both). If you can, please use milk.

-Use a small personal non-stick pan for this 2-egg omelette. Spray with non-stick spray anyway before the butter step and do not be afraid to use both a spatula and another utensil to help fold the omelette while learning. You may have to experiment with different spatulas as well.

Just so you know it works, this was my first attempt (mini coke bottle and blender bottle for scale — should also help determine size of non-stick pan to use). Just a simple shredded cheese omelette (the perfect first omelette):

Best of luck on your eggy journey!
