With Oblivion, it's a mess with a 32-bit executable, and a straight recompile was never going to happen. It also has issues above 60fps. The upshot is it's only a remaster instead of a remake, so it's still Oblivion.

Kinda depends. Wind Waker didn't even need a touchup imo, in fact it looks worse in HD. Also, 2D games being remade in 3D is novel and different enough an experience that something like Chrono Trigger would feel new again (plus you'd get orchestral music & voice acting). It's stupid to see something like TLOU2 remastered though.

I'm fine with the remaster as it is. It was worth the $0 I spent on it. Unreal is unironically easier to mod than Gamebryo/Creation, for those that care.
