Gator is good when done right, but incredibly easy to fuck up. In Florida it's either fried and rubbery as hell (you see over-fried gator tail at a lot of tourist traps) or it's smoked, which tastes a lot better but you're paying for the privilege. In Louisiana there's a lot more variety (spicy gator sausages are a personal favorite). I think a lot of good gator recipes were born out of desperation.
EDIT: as far as apex predators go, I'd love to eat an orca steak. Those smug fucks probably taste delicious.

Orca is probably like other porpoises, so red it's almost purple.

As for taste, I imagine it would be fishy based on their diet. I'm sure there's a catch and cook of something similar.

My grandpa one time tried feeding a fox on his property some chicken patties the local school used. The fox refused to touch them. Foxes will eat right out of a trashcan. The patties tasted like they were mostly soy with hints of chicken.

Reminded of this clip with Jamie Oliver making chicken nuggets for kids. Before anyone tries to defend this, I understand that canned tomatoes are generally more acidic than fresh, and adding some sweetness can cut down on the acidity (not that that actually changes the pH, but I don't feel like getting into that aspect of it) but traditionally that sweetness comes from something like carrots in a bolognese sauce for example. You could also just cook the sauce down for longer if using better quality tomatoes isn't possible for whatever reason.

Dumping a cup of white granulated sugar into pre-made pasta sauce from a jar (which is already packed with added sugar) is pure retardation.

Most of my pasta sauces use sauteed or pan-fried onions for sweetness, and I'm frying up meat I'll sometimes use a red vermouth for deglazing if I fancy a distinctly sweet sauce, though I'll usually add a healthy amount of crushed chili to balance it.

In my experience the type of tomatoes you use goes a long way. I'm Italian and I used to add a little bit of sugar to balance acidity but after switching brands it's no longer needed. Adding a copious amount of sugar to a jar sauce though is definitely pure nigger retardation.
