I genuinely cannot wrap my head around someone adding that much sugar to jarred sauce. A pinch? Sure, if it's too acidic go ahead, but that looked like at least a half cup before the cut. That's just going to end up tasting like tomato flavored kool-aid. I guess the adage about their only baseline for "white people food" being cafeteria slop is true. That being said this is, somehow, still not as bad as DSP's sauce.

If you’re using crap tomatoes you add sugar, but only like a teaspoon. You don’t if you’re using quality ingredients.

Also, make a ragu with good tomatoes and
Mirepoix (onion, celery, and carrots) plus a bit of stock if you’re cooking it for hours. Oh, a bit of wine too. That with any meat is perfect and you don’t need a million herbs.

I've been to the Forodhani Night Market in Stone Town. I didn't try Zanzibar Pizza. The market was mainly tables covered in cooked seafood and meat. I did not eat anything as tables of seafood and meat cooked at an undetermined time, sitting out in the open in a hot climate is outside the parameters of what street food I would eat when travelling.
