Background check the fuck out of him. On the other hand, don't stir the hornets nest... it's not like you, a normie, is going to find something you could leverage in any meaningful way if shit hit's the fan somehow, sometime in the future. Maybe it's even a nice bonus to stay on their good side by leaving things be.
It's draining to pretend you know nothing after finding out about shit.
Only you know if there's a reason for the man to keep tabs on you and if that should concern you. It's not morally wrong, tho. Doesn't hurt anybody.
And if you think you need to know about feds in your private life, it's not like they would have any moral qualms about checking your info either.

I am a research scientist by trade. And I’ve too much honesty for a reasonable man, I felt too much guilt and told her I stalked her father. Now I’m a bit in the doghouse and she’s upset. As a cuck I promised not to do it anymore.

But I did find out he’s now a professor previously aligned with green peace and satellite imaging. Do with that what you may but this nigga was probably surveying water rights for future negotiations in resource sharing when the water shortage hits. Greenpeace was the same kind of dark money that funded Occupy Wallstreet.

TLDR my gf is pissed at me and I’m making concessions so she doesn’t break up. Never tell the missus what you’re up to.

Yeah, you fudged up there. But it sounds like it will blow over. Doesn't sound like he's a fed, but he glows. Personally, these low level "recruited" people are the worst. The actual career officers guiding them or literal federal agents and the likes are at least "only dowing a jeeb" and can be likeable in private, even useful because they have actual weight in their orgs.
I got my take on that second hand from east germany. Another problem with the low level glowies is, often their relatives are also recruited...

How should I passively gather data and insight? she’s pissed I violated those blinds of privacy which I say are admittedly reasonable, like you wouldn’t expect a partner to do a deep dive into your lineage. But how do I low signal espionage at the family dinner if I haven’t already been kicked out and blocked? (I said she should block me if she’s upset) {ya boi be making concessions}

I don't think you can do that now.
If you must, I would feign interest in greenpeace at the dinner table or maybe muse about whatever topics you think he was involved with,
but that would only work if you can somehow justify looking him up and make it seem innocent.
"Hey you mentioned your dad teaches at university, I looked him up and he did work at greenpeace too. so cool. sorry, I know, kinda creepy but I was curious."
Did it go down something like that? Then it's still salvageable, otherwise ABORT! ABORT! Do you really want to know more? Do you have to?
