Edit: All done. Eating a piece of the thigh.

I found a grocery store that sold this beauty, so I'm going to update and share my journey of Discovery as I attempt, but most likely ultimately fail, to make Peking duck.

Milestone 1: Bartered with a Chinaman.

Milestone 2: Smoked weed while watching people on the internet make Peking Duck.

Thank you for spoilering that naked duck. This site is SFW as Daddy Null likes to remind us. I don't need someone to walk in and see me looking at that. I do not need another lecture about browsing dead naked animal porn at work.

As a tip, if you can't get an even brown crispy skin. You can use heated oil to crisp up the parts that didn't crisp up properly. Also, do you plan to roast it traditionally? That takes a very long time to do and is a bit of a hassle.

I plan on going low and slow. He's currently drying.

Do you have a big enough Wok to actually do this? And is your stove Gas powered? Part of what makes Peking Duck obnoxious is you need to work with some pretty esoteric equipment. Like the Wok, the Ladel, the Gas Fire, and of course fucking hot as shit sauce. Its a ton of work. Be careful nigga, don't do this alone and remember, third degree burns are forever!

I am following a recipe modified for home use. The trade-offs made do not appear to impact the final product.
