I liked his Westburo Baptist Church one, I think it was kind of an accident, because like Josh said they didn't give him what he really wanted - but it showed that there were essentially two levels of membership. There where the guys who knew it was really a lawsuit machine and the true believers like the ex-libertarian guy.
There is a follow-up documentary on the church that Louis made right after Fred died but it's far more focused on the individual lives of the members of the church, not the organization itself. I don't recommend it mostly because it assumes you are really invested in the family drama. The only interesting part is how quickly everyone within became disillusioned and rebellious once the guy holding it together died.
My bad that actually happens in S3. And yes, you should keep watching even if you hate Chuck. Everyone hates Chuck.
