Ideas for cooking with plantains?

So, I ate fried plantain for the first time today, and one thing that shocked me was how much the plantain reminds me of sweet potato in terms of consistency, texture, the general feeling of eating. The difference, of course, is just that plantains are banana-flavored, but they're both sweet. I can't stand sweet potato, but fried plantain is fine with me.

That got me thinking about other possibilities of using the plantain. In particular, I was thinking that it could be fried and then mashed to make a sweet version of mashed potatoes, but what would you use for the gravy? I don't know about healthy possibilities, but I'm toying with the idea of making a "dessert" mashed plantains dish where the "gravy" equivalent is some sort of chocolate or other sweet sauce. I'm not sure, though. Will probably try it with chocolate syrup.

I vote that you do that, but instead of just eating the mashed plantains, get some vanilla icecream and spread it over that, then add syrup.

Or maybe use it as a kind of frosting for a home-baked cake.
 
Pastelon is like Puerto Rican lasagna made with thin sliced plantains instead of noodles. The spice blends needed to make it authentically can be a little hard to find if you don't have a hispanic market nearby but bootleg Americanized pastelon is still tasty.
