The Oxford History of Ancient Egypt by Ian Shaw - Great if you want a single, detailed volume covering Egypt's ancient history

The Complete Gods and Goddesses of Ancient Egypt by Richard H. Wilkinson - Perfect if you're curious about Egyptian spirituality, gods like Ra, Anubis, or Osiris, and the meanings behind symbols and rituals.

Ancient Egypt: Anatomy of a Civilization by Barry J. Kemp - If you want a look into how Ancient Egypt functioned as a civilization.

The Rise and Fall of Ancient Egypt by Toby Wilkinson - Another great book on Ancient Egypt's history.

Ancient Egypt: The Definitive Visual History - Covers 3000 years worth of history with images of locations, maps, relics, etc..

The Egyptian Book of the Dead: The Book of Going Forth by Day - If you want to look into the Ancient Egyptian concept of the afterlife.
 
UCLA has an encyclopedia on Egyptology that is pretty solid, though maybe you have to look for specific topics in it. I used it when writing academic papers on Demotic Egypt and was impressed.
