Usually it’s strategy games, not because they’re all that good but because they’re built out of repetitive loops and give you tons of micro-tasks that are so easily completed but also set up the next one that you just squirrel away at it endlessly.

Anno 1800 is a horrifying time sink.

I had a really great time playing the new system shock like this. I kinda just vegged out and let my mind wander as I played and listened to podcasts
 
once you get a run going in noita where you're basically immortal you're gonna be locked in for a while
 
X-Com mods get absurdly expansive and equally addicting

When I first started playing XPiratez I ended up spending all my free time on it for almost three weeks
 
I have a few like this, but yesterday age of wonders 4 caught me off guard and I lost literally 5 hours of my day without realizing it.
 
Rimworld and the Mount and blade games. I once played 9 hours of Warband before realizing it was 4 am.
 
4X games, especially older ones I have played since childhood so its kind of a comforting well-wrong gameplay loop. My ability to go into something like the older Civs, Alpha Centauri, Master of Orion etc when I just need to turn off for awhile can actually be a good down time between busy periods.

Games like Planet Zoo, Cities Skylines, Project Hospital. I should probably be thinking more when playing these actually, but unlike real life I can bail and start over when things get too big and all the ignored problems pile up too much to be ignored!
 
Dwarf Fortress, Rimworld, any city/colony builder like that just makes entire days disappear
