My favorite readily available meat is veal in most forms - roast beef is also nice.
I'm generally incompotent when it comes to preparing those, though, so I prefer eating them at restaurants.

Dried meats, generally dehydrated Charcuterie (fuck off spell checker), it's perhaps the most genius protein on the face of this rock and not enough on-foot travelers embrace its benefits. While a lot of it in chain stores are over processed trite it's still better than eating nothing but chips and candy during your on-foot commute to the ballpark.

Also, that white-powdered sausage (Salami, Pepperoni, whatever else) you eat with cheese and wine is sex crystals.

There's nothing more comforting for me than a delicious wad of ropa vieja. Most recipes call for a slow cooker, but I grew up with the old-fashioned recipe: slow and low; cooked for hours in a large pot. Also, there will always be a large place in my heart (both figuratively and literally) for chorizo.

Beef, chicken and pork are the holy trinity, special mentions to lamb (if it's done right) and turkey. I've been told good things about duck, but I could never find any where it wasn't dryer than a desiccant packet. I've always wanted to try ox, bison, and deer.

In the past few years, I've developed a fierce appreciation for kielbasa, but my current diet limitations wouldn't allow me to have more than three ounces of it without slipping into a food coma.

I also like horse. It's lovely and dense. Most other Brits think I'm some sort of barbarian for eating horse but they're all wrong. Horse is wonderfully flavoursome too, esp. if it's cooked by someone who knows what they're about. I've had zebra as well which is similar and contrary to popular belief, isn't stripy on the inside.

I'd love to try horse. Mostly because I don't really like horses when they're alive. :powerlevel:

I love game meats in general. Venison, bison, boar, lamb, anything with a gamey flavor. Also crab and lobster.

Are we counting seafood? I used to dive for abalone with my pops and when prepared correctly a freshly caught abalone steak tastes like a chewy, buttery ocean.

Duck, mutton and quail. Quail is really good.

Beef, any and all cuts and preparations. My favorite this time of year is Beef Bourguignon, which is surprisingly simple and oh so delicious.

Veal is the most delicious of the unhappy meats. Pan sauteed chop about an inch and a half thick narrowly edges out osso bucco.

Lamb is great, though I'm not that adventurous with it. Best I've had is a whole grilled little fella.

Goat, all the goat I've eaten has been nasty. Not sure if I'm just getting bad samples or if the animal itself is gross.

Pork, I don't really dig on the ears and the feet but everything else is fair game. Pulled pork done correctly is manna.

Chicken, I'd go with grilled boneless thighs with some chimichurri sauce drizzled over them. I don't go in for the hearts or livers, as I am not an immigrant.

Alligator tasted like an ever so slightly gamey pork loin. No fat at all though.

Deer is too lean. The only flavor I notice from it is the gameyness and the preparation. It's fine for what it is but not really what I'm ever looking to eat.

Buffalo, I've hung out with some live buffalo. Their meat tastes like they smell.

Dog, I cannot prove that I have eaten dog, as I can't read Mandarin but from the girl's reaction when I pointed out my menu item and the shocked look when I insisted, I'm pretty sure I have consumed a canine. Wasn't too bad though the flavor was mostly sauce.

I like this in a vindaloo, perhaps because the spice tends to mask the somewhat gamy taste.
