I'll say it at every chance I get, Lost Odyssey (of which I know nothing but this) has the best and most unique overworld theme I've ever heard.
In general, I love the weirdness and strangely appealing dissonance of the Shadow Hearts soundtracks (though the first game may have overdone it a bit with the out of tune chants)
Also a fan of how weird and eclectic the first couple of Way of the Samurai games' OSTs were
Suikoden has great music too.
These particular Suikoden ones to this day get me a bit misty-eyed.
D2 is a in a class of its own, the OST is one of the many reasons why other topdown aRPGs can't hold a candle to it. I wasted hundreds of hours in D3 and I wouldn't be able to hum a single melody if you pressed me, this I have etched in my memory forever.
In the UT99 vs Q3A, imo UT comes out on top hard when it muzak is concerned, even if Front Line Assembly/Sonic Mayhem did an incredibly good job as well.
SS while simplistic and sometimes samey fits the game perfectly. The tracks have a distinctive melody at least.
Last but not least, DRG. You know it's good shit when you can practically hear the action from the song alone.
